These collectors pay the restaurants for the right to come pick up their grease. The collector being interviewed for this story has contracts with 400+ restaurants.

The restaurants are glad to start getting paid something that used to be garbage. The collector obviously wants to get the grease he’s entitled to.

If used grease is just waste needing to be disposed of, who would object to having it “stolen?” Are they already being paid for the grease that’s collected? Or maybe they’re losing their barrels to theft along with the grease. That would be pretty annoying.
